NQtac Hotel School is situated on the magnificent Garden Route in South Africa.

From our campus, we offer a wide variety of courses – ranging from short courses, such as our most popular Assistant Chef Programme, to multi-year diplomas. All programmes offered are either City & Guilds International accredited qualifications or a South African National qualification.

City & Guilds Registered Full-Time Qualifications

These programmes are suitable for people who want to gain a formal international qualification in order to travel the world or are ready to start a career in the wonderful field of hospitality.

It is not necessary to have any previous working experience in the hotel industry, we will provide you with both the work experience and theoretical knowledge to step easily into a great position in the industry. The qualifications are widely accepted internationally in over 120 countries.

Theory is completed on campus and practical placement is done in industry.

Practical placement in a suitable establishment for a period of 12 months over the 3 year period is required for the practical component and NQtac will provide placement in top hotels and restaurants through our partners in industry.

Entry level requirements: It is advisable that candidates studying these qualifications should have a Matric, O level, A level or equivalent or be over 25 years of age. Recognition of prior learning or previous industry experience will also be considered on an individual basis.

Hospitality Management Diploma - 3 Year Qualification

Year 1 Modules:

Food & Beverage
All aspects of the food and beverage department: restaurant service, bar, room service, wine service, barista
Food Preparation and Cooking
Food hygiene and storage, knife handling, commodities, preparing and cooking methods

Year 2 Modules:

Accommodation Services
Housekeeping in the hospitality industry: servicing guest rooms, laundry, public areas
Reception
All aspects of Front of house: reception, porterage, reservations, concierge

Year 3 Modules:

The final year consists of two aspects:
Diploma level in all operational areas
Experiential practical placement in a 4 or 5 star property in industry

Diploma in Food Preparation and Culinary Arts - 3 Year Qualification

Year 1 Modules:

Food & Beverage
All aspects of the food and beverage department: restaurant service, bar, room service, wine service, barista
Food Preparation and Cooking
Food hygiene and storage, knife handling, commodities, preparing and cooking methods

Year 2 Modules:

Food preparation and culinary arts
Advanced cooking and preparation methods of complex dishes, awareness of sustainability, all aspects of food industry

Year 3 Modules:

Supervisory level qualification for kitchen management
Advanced Diploma in Culinary arts and supervision
Specialisation in pastry section – desserts, cakes, petit fours, bakery
Patisserie Diploma

Assistant Chef Skills Programme

This is a South African nationally recognised Skills Programme, comprising of a number of credits.

There are no formal entry requirements but the learners must be able to read, write and speak English.

Although it was originally targeted towards people who are working, it is the perfect qualification for those who want to start in the kitchen with the sound knowledge and practical skills required in this field.

The programme covers a very broad range of methods and commodities as well as generic developmental skills to assist learners to gain employment once completed.

Assistant Chef Skills Programme

National qualification - 6 months part time course on campus - 20 (1 day) sessions, including practical and theory, consists of 6 modules:
1. Safety and security in the workplace
2. Hygiene and knife handling
3. Meat, sauces and soups
4. Fish, eggs and starch
5. Cold food presentation and carvery
6. Computers, telephone and self-development
